melon granitas

I found this recipe on the cover of one of my mom's womens day magazines (August 2011 issue). Its called melon granitas. it was pretty easy to make and made very little mess, and only took me about ten minutes to make.


Ingredients:
1/2 cup sugar
1/2 cup water
about four cups of chopped melon.... either honeydew, cantalope, or watermelon. (we used watermelon).
meat loaf pan

serves 4


                                                              very simply chopped melon.


                                                                      about four cups....


add the sugar in a small saucepan..

and the water....


bring to a boil (but DO NOT STIR) after it boils turn down the heat to low and let it simmer until all of the sugar dissolves..


this is what it should look like after all the sugar dissolves..
let the syrup cool completely, then put the melon and syrup in a food processor..
mix until smooth



strain the mixture into the pan..


cover and place into the freezer for three to five hours (or overnight)
after its totally frozen let it sit on the counter for a few minutes. Then just take a fork and scrap it across to get flakes. it should look like this >>>>

last minute chicken stir-fry

This is a stir-fry that we threw together at last minute.... It took us about 20-30 minutes to make and was pretty easy.  Our family loves stir-fries so we know how to make one from watching our mom make them all the time..


Ingredients:
Two whole chicken breasts  (or four)
One egg
1/2 cup snap peas
1/4 cup chopped onions
various sauces, we used general tso's, kung pao, and soy sauce






cook four chicken breasts in olive oil on medium heat. (we made four for the people who don't like the stir fry)


Remove chicken from pan and cut into medium-ish  size pieces....


Add the onions...
                                                              

                                    scramble the egg and then add that....

some snap peas.....

add the cut up chicken....

some soy sauce..

tablespoon of kung pao..




tablespoon of general tso's



mix



you can it it plain or add some pasta or rice.. we added rice
